*The kids and I made these for our FHE treat.  A fun way to get into the scriptures--and then we were rewarded with a delicate shortbread, sugar cookie-type treat.

Oven Baked Chicken

Dayna's version:

Open packaged chicken. Remove neck. Rinse.  Sprinkle 1 pkg onion soup mix on both sides of chicken.

Cover with lid or tinfoil. Cook on 300 for 3 ½ hours.  (Lower heat makes more moist). Tastes like rotisserie chicken. Perfect for dinner after church.

*Ivan and Jeff loved these (and Jeff isn't a big oatmeal fan--they were just so chewy).

Spinach Salad

1 pkg spinach
Grated Parmesan cheese
4-6 asparagus spears, cut about 1/2 inch long
Romain lettuce
Dried cranberries
Sunflower seeds

Dressing:
1 T sugar
1/2 c cider vinegar
1/2 c olive oil
1 T poppy seed
1 T grated onion
1/2 t dry mustard

* Simple, easy, a good base recipe.  Could add fresh sliced pears or apples.  Made more dressing than I needed.

Broiled Veggies

1 green pepper
4-6 asparagus
1 large Roma tomato
Onion
Mozzarella or hallouni cheese
Jumbo shrimp

For the Marinade:
6 T olive oil
1 T balsamic vinegar
1 T dried tarragon leaves
1 clove garlic, crushed
salt and pepper

Directions:
1.  Make the marinade; put all the ingredients in a large bowl and stir well to mix.
2.  Cover and chill for 1-4 hours.
3.  Just before cooking, preheat the broiler for 5 minutes on high.
4.  Reduce the heat to medium-high.  Broil about 4 inches from heat, for about 10 minutes, turning them twice and brushing with more marinade.

*This was delicious.  The cheese and shrimp I liked better before they were broiled (the shrimp were from a bag of frozen cooked shrimp). The mozzarella melted.  Other veggies that would taste good might include cherry tomatoes, zucchini or winter squash.  I also used some Italian dressing in place of the olive oil.
