Baked Wild Caught Salmon

Ingredients:
2 (6 oz) salmon fillets
2 garlic cloves, minced
6 T light olive oil
1 t dried basil
1 t salt (I recommend leaving this out)
1 t ground black pepper
1 t lemon juice
1 T fresh parsley, chopped

Directions:
1.  In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice, and parsley.  Place salmon fillets in a medium glass baking dish, and cover with the marinade.  Marinate in the refrigerator about 1 hour, turning occasionally.
2.  Preheat oven to 375 degrees F.
3.  Place salmon in aluminum foil, cover with marinade, and seal.  Place sealed fish in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

*Super moist and easy.  Baking in foil doesn't give the salmon the same appearance as grilling, but the flavor was superb.  I did use fresh basil and next time I'll leave the salt out (it was just a little too salty for my taste).  This made the perfect amount for my little family of five, but eventually I'll have to increase it; my 5 year old persists that salmon is his favorite food.
